Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted

Directions:
Preheat oven to 350°F (175°C).
Grease an 8×8-inch baking dish.
In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup granulated sugar.
Mix until well combined.
Press the mixture into the bottom of the prepared baking dish to form a crust.
Bake for 10 minutes, then set aside to cool.

Pour the coconut cream filling over the cooled crust.
Cover with plastic wrap, pressing directly onto the surface to prevent a skin from forming. Refrigerate for at least 4 hours, or until fully set.
In a large bowl, beat heavy cream, powdered sugar, and 1/2 teaspoon vanilla extract until stiff peaks form.
Spread the whipped cream over the set coconut cream layer. Garnish with extra toasted coconut.
Cut into squares and serve chilled.
