Chocolate Covered Donuts
Decadent Chocolate Glazed Donuts
Ingredients:
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
1 tablespoon coconut oil (for the chocolate glaze)
Directions:
Preheat your oven to 350°F (175°C).
Grease a donut pan and set it aside.
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Be careful not to overmix.
Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
Bake for 10-12 minutes, or until a toothpick inserted into the donuts comes out clean.
Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
While the donuts are cooling, melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
Dip the tops of the cooled donuts into the melted chocolate, allowing any excess to drip off.
Place the donuts back on the wire rack to set.
