Creamy White Chicken Chili
Ingredients:
1 lb boneless, skinless chicken breasts
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 jalapeño, seeded and diced
1 can (15 oz) cannellini beans, drained and rinsed
1 can (15 oz) diced green chilies
4 cups chicken broth
1 cup frozen corn
1 cup heavy cream
1 teaspoon ground cumin
1 teaspoon dried oregano
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Directions:
Heat olive oil in a large pot over medium heat.
Add the diced onion and cook until softened, about 5 minutes.
Add garlic and jalapeño, cooking for an additional 1-2 minutes until fragrant.
Add the chicken breasts to the pot and cook until browned on both sides.
Remove chicken and set aside.
Pour in chicken broth, scraping up any browned bits from the bottom of the pot.
Add cannellini beans, diced green chilies, and frozen corn to the pot.
Stir to combine.
Return chicken breasts to the pot and bring the mixture to a simmer.
Cook for 20-25 minutes, or until the chicken is cooked through.
Remove chicken from the pot and shred with two forks.
Return shredded chicken to the pot.
Stir in heavy cream, cumin, oregano, salt, and pepper.
Simmer for an additional 5 minutes.
Remove from heat and stir in chopped cilantro and lime juice before serving.
