Tender Almond Cake
Ingredients:
2 cups almond flour
1/2 cup unsweetened applesauce
1/4 cup coconut oil, melted
4 large eggs
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
Optional: 1/4 cup chopped nuts or sugar-free chocolate chips for added texture
Directions:
Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan or line it with parchment paper.
In a large mixing bowl, combine the almond flour, baking powder, and salt.
In a separate bowl, whisk together the eggs, applesauce, melted coconut oil, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until well combined.
If you’re adding nuts or chocolate chips, fold them into the batter at this stage.
Pour the batter into the prepared cake pan, smoothing the top with a spatula.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
