Luscious Mango Tiramisu Delight
Ingredients:
3 ripe mangoes, peeled and diced
16 oz mascarpone cheese
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy cream
1/2 cup mango puree
1/4 cup freshly squeezed orange juice
1 package of ladyfinger biscuits
1 tbsp grated coconut (optional)
Fresh mint leaves for garnish
Directions:
In a mixing bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until soft peaks form.
Gently fold the whipped cream into the mascarpone mixture.
Dip each ladyfinger biscuit into the orange juice for a few seconds, ensuring they’re soaked but not soggy.
Layer the bottom of a serving dish with the soaked ladyfingers.
Spread a layer of the mascarpone mixture over the ladyfingers, followed by a layer of diced mangoes.
Repeat the layers until all the ingredients are used, finishing with a layer of mascarpone mixture on top.
Drizzle mango puree over the top layer and sprinkle with grated coconut, if using.
Chill the tiramisu in the refrigerator for at least 4 hours or overnight.
Garnish with fresh mint leaves before serving.
