Creamy Summer Peach Ice Cream
Ingredients:
4 cups fresh peaches, peeled and diced
1 cup granulated sugar
1 cup whole milk
1 cup heavy cream
1 teaspoon vanilla extract
1 tablespoon lemon juice
A pinch of salt
Directions:
In a medium bowl, combine the diced peaches with 1/2 cup of sugar.
Let them sit for about 30 minutes to release their juices.
Blend the peaches and their juices until smooth. Strain through a fine mesh sieve to remove any solids.
In another bowl, whisk together the remaining 1/2 cup of sugar with the milk until dissolved. Stir in the heavy cream, vanilla extract, lemon juice, and a pinch of salt.
Combine the peach puree with the milk mixture and mix well.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, typically about 20-25 minutes.
Transfer the churned ice cream to a lidded container and freeze for at least 2 hours before serving.
