Classic Old-Fashioned Beef Stew

Hearty Homestyle Beef Stew

Ingredients:

2 lbs beef chuck, cut into 1-inch cubes
3 tablespoons all-purpose flour
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
1 cup red wine (optional)
3 large carrots, peeled and sliced
4 potatoes, peeled and cubed
2 stalks celery, sliced
1 tablespoon tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (for garnish)

Directions:

In a large bowl, toss the beef cubes with flour until evenly coated.

Heat olive oil in a large pot over medium-high heat. Brown the beef in batches, ensuring all sides are seared. Remove the beef and set it aside.

In the same pot, add the chopped onion and garlic.

Sauté until the onion becomes translucent.

Add the tomato paste, thyme, rosemary, and bay leaf to the pot.

Stir for 1-2 minutes until fragrant.

Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the pot. Bring to a boil.

Return the browned beef to the pot. Reduce the heat, cover, and simmer for 1.5 hours.

Add the carrots, potatoes, and celery to the pot. Continue to simmer for an additional 30-40 minutes, or until the vegetables are tender.

Remove the bay leaf, season with salt and pepper, and garnish with fresh parsley before serving.
