Ingredients:
1 lb beef stew meat, cubed
2 carrots, sliced
2 celery stalks, chopped
1 onion, diced
2 potatoes, cubed
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
6 cups beef broth
1 cup green beans, trimmed
1 cup corn kernels (fresh or frozen)
1 cup peas (fresh or frozen)
2 bay leaves
1 tsp dried thyme
1 tsp paprika
Salt and pepper to taste
1 tbsp olive oil
Directions:
Heat olive oil in a large pot over medium heat.
Add beef and brown on all sides, about 5-7 minutes.
Add the onions and garlic, and cook until softened, about 3 minutes.
Add the carrots, celery, and potatoes. Stir in diced tomatoes, beef broth, bay leaves, thyme, and paprika.
Bring the soup to a boil, then reduce heat and simmer for 45 minutes, stirring occasionally.
Add green beans, corn, and peas to the pot, and cook for another 10-15 minutes, or until vegetables are tender.
Season with salt and pepper to taste. Remove bay leaves before serving.
