Thai Lime-Garlic Steamed Fish
Fragrant Thai Steamed Fish with Zesty Lime and Garlic
Ingredients:
1 whole white fish (such as sea bass or snapper), cleaned and scaled
4 cloves garlic, minced
1-2 bird’s eye chilies, finely sliced
3 tablespoons fresh lime juice
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon palm sugar (or brown sugar)
1/4 cup fresh cilantro, chopped
1/4 cup fresh Thai basil leaves
2 stalks lemongrass, bruised
3-4 lime slices, for garnish
Steamed jasmine rice, for serving
Directions:
Prepare your steamer by filling a large pot with water and bringing it to a boil.
Place the cleaned fish on a heatproof plate that fits inside the steamer.
Stuff the cavity with bruised lemongrass and a few lime slices.
In a small bowl, mix together the lime juice, fish sauce, soy sauce, and palm sugar until the sugar is fully dissolved.
Add the minced garlic and sliced bird’s eye chilies.
Pour the sauce mixture evenly over the fish. Place the plate in the steamer and cover.
Steam over medium heat for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
Once cooked, remove the fish from the steamer and garnish with fresh cilantro, Thai basil, and additional lime slices.
