Crispy Taco Tater Tot Bake
Ingredients:
1 lb ground beef
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilies
1 can (15 oz) black beans, drained and rinsed
2 cups shredded cheddar cheese
1 bag (32 oz) frozen tater tots
1/4 cup sliced green onions
Sour cream and salsa for serving
Directions:
Preheat oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat until browned.
Drain excess fat.
Add taco seasoning and diced tomatoes with green chilies to the beef.
Stir to combine and cook for 2-3 minutes.
Stir in black beans and cook for an additional 2 minutes.
Spread the beef mixture evenly in the bottom of a 9×13-inch baking dish.
Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
Arrange the tater tots in a single layer over the cheese.
Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden and crispy.
Remove from the oven and sprinkle the remaining 1 cup of cheddar cheese and green onions over the top.
Return to the oven and bake for an additional 5 minutes, or until the cheese is melted.
Serve with sour cream and salsa on the side.
