Taco Stuffed Bell Peppers
Zesty Taco-Stuffed Bell Peppers with Beef and Cheese
Ingredients:
4 large bell peppers
1 lb ground beef (or turkey)
1 tablespoon olive oil
1 packet taco seasoning
1/2 cup salsa
1/2 cup cooked rice
1 cup shredded cheddar cheese
1/2 cup black beans (optional)
1/4 cup corn kernels (optional)
1/4 cup chopped cilantro
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
Add taco seasoning, salsa, and cooked rice to the skillet, stirring to combine. Cook for another 3-4 minutes.
Stir in black beans and corn (if using), and cook for 2 minutes.
Remove the skillet from heat and stir in 1/2 cup of shredded cheddar cheese and chopped cilantro. Season with salt and pepper.
Stuff each bell pepper with the taco mixture and place them upright in a baking dish.
Sprinkle the remaining cheese over the top of each stuffed pepper.
Bake for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden.
