Strawberry Vanilla Bean Ice Cream
Creamy Strawberry Vanilla Bean Delight
Ingredients:
2 cups fresh strawberries, hulled and sliced
1 vanilla bean, split and seeds scraped
1 cup granulated sugar
2 cups heavy cream
1 cup whole milk
4 large egg yolks
1 teaspoon lemon juice
Pinch of salt
Directions:
In a medium saucepan, combine the strawberries, 1/2 cup of sugar, and lemon juice.
Cook over medium heat until the strawberries are soft and syrupy, about 10 minutes. Remove from heat and let cool slightly, then blend until smooth.
In another saucepan, combine the cream, milk, vanilla bean seeds, and the split vanilla bean. Heat over medium heat until it begins to simmer.
Remove from heat and let the vanilla infuse for about 15 minutes.
In a bowl, whisk together the egg yolks, remaining 1/2 cup sugar, and salt until pale and thick.
Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly.
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 5-7 minutes.
Remove from heat and strain through a fine-mesh sieve to remove the vanilla bean and any cooked egg bits.
Stir in the strawberry puree until well combined.
Chill the mixture in the refrigerator for at least 4 hours or overnight.
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
Transfer the ice cream to a lidded container and freeze until firm, at least 4 hours before serving.
