Ingredients:
1 package puff pastry sheets (thawed)
2 cups fresh spinach, chopped
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 egg (for egg wash)
Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
Line a baking sheet with parchment paper.
In a large skillet, heat olive oil over medium heat.
Add the chopped onion and garlic, sautéing until the onion is translucent.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
Remove from heat and let it cool slightly.
In a mixing bowl, combine the cooked spinach mixture with ricotta and Parmesan cheese.
Season with salt and pepper to taste.
Roll out the puff pastry sheets on a lightly floured surface.
Cut each sheet into 4 equal squares.
Place a spoonful of the spinach mixture in the center of each pastry square.
Fold the pastry over to form a triangle or rectangle, pressing the edges together with a fork to seal.
Place the pastries on the prepared baking sheet and brush the tops with the beaten egg for a golden finish.
Bake for 20-25 minutes, or until the pastries are puffed and golden brown.
