Ingredients:

1 package (17.3 oz) puff pastry sheets, thawed
2 cups fresh spinach, chopped
1 cup crumbled feta cheese
1/2 cup ricotta cheese
1 egg, beaten (for filling)
1 egg, beaten (for egg wash)
1/4 teaspoon nutmeg
Salt and pepper to taste
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced

Directions:

Preheat oven to 400°F (200°C).

Heat olive oil in a skillet over medium heat.

Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

Add the spinach to the skillet, cooking until wilted, about 2 minutes.

Remove from heat and let cool slightly.

In a mixing bowl, combine the cooked spinach mixture, feta cheese, ricotta cheese, beaten egg, nutmeg, salt, and pepper.

Mix until well combined.

Roll out the puff pastry sheets on a lightly floured surface.

Cut each sheet into 4 squares.
