Ingredients:
1 lb flank steak
3 bell peppers (red, yellow, green), sliced
1 large onion, sliced
2 tablespoons olive oil
3 tablespoons lime juice
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
8 flour tortillas
Fresh cilantro, chopped (for garnish)
Sour cream, guacamole, and salsa (optional)
Directions:
In a large bowl, whisk together the olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
Add the flank steak to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.
While the steak is marinating, heat a large skillet over medium-high heat. Add the sliced bell peppers and onion, cooking until they are tender and slightly charred, about 7-8 minutes.
Remove from the skillet and set aside.
In the same skillet, add the marinated steak, cooking for 4-5 minutes per side or until it reaches your desired level of doneness.
Remove the steak from the skillet and let it rest for 5 minutes before slicing thinly against the grain.
Warm the flour tortillas in the skillet for about 30 seconds on each side.
To assemble the fajitas, place a few slices of steak on each tortilla, top with the sautéed peppers and onions, and garnish with fresh cilantro. Serve with sour cream, guacamole, and salsa if desired.
