Lavender-Hued Velvet Cake with Lush Cream Cheese Icing
Recipe:
Ingredients:
2 ½ cups all-purpose flour
2 cups granulated sugar
1 cup buttermilk
1 cup vegetable oil
1 teaspoon vanilla extract
1 tablespoon cocoa powder
1 teaspoon baking soda
1 teaspoon white vinegar
½ teaspoon salt
2 large eggs
1 teaspoon purple gel food coloring
Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
2-3 tablespoons heavy cream
Directions:
Preheat the oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, oil, eggs, vinegar, vanilla extract, and purple food coloring until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
For the frosting, beat the cream cheese and butter together until smooth.
Gradually add powdered sugar, vanilla extract, and enough heavy cream to achieve the desired consistency.
Once the cakes are cool, frost the top of one cake layer, place the second layer on top, and frost the entire cake.
