Ingredients:
1 sheet puff pastry (thawed if frozen)
1/2 lb sausage meat (bulk or removed from casings)
1/4 cup finely chopped onion
1/4 cup finely chopped apple (optional)
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1/2 teaspoon paprika
1 egg, beaten (for egg wash)
Salt and pepper to taste
Directions:
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a medium bowl, combine sausage meat, chopped onion, apple (if using), Dijon mustard, dried thyme, paprika, salt, and pepper. Mix until well combined.
Roll out the puff pastry sheet on a lightly floured surface.
Cut the pastry into 4 equal rectangles.
Place a portion of the sausage mixture down the center of each pastry rectangle.
Fold the sides of the pastry over the sausage mixture to form a log shape, pressing the edges to seal.
Place the sausage rolls seam-side down on the prepared baking sheet.
Brush the tops of the sausage rolls with the beaten egg.
Bake for 20-25 minutes, or until the pastry is golden brown and crispy. Let cool slightly before serving.
