Ingredients:
For the Choux Pastry:
1/2 cup (120ml) water
1/2 cup (120ml) whole milk
1/2 cup (113g) unsalted butter
1/4 teaspoon salt
1 tablespoon granulated sugar
1 cup (125g) all-purpose flour
4 large eggs
For the Almond Crust:
1/2 cup (50g) sliced almonds
1 egg, lightly beaten (for egg wash)
1 tablespoon powdered sugar (for dusting)
For the Creamy Vanilla Filling:
1 1/2 cups (360ml) heavy cream
1/2 cup (60g) powdered sugar
1 vanilla bean, seeds scraped (or 2 teaspoons vanilla extract)
Directions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a medium saucepan, combine water, milk, butter, salt, and sugar.
Bring to a boil over medium heat.
Once boiling, remove from heat and stir in flour all at once.
Return to the heat and stir continuously until the mixture forms a ball and pulls away from the sides of the pan.
Transfer the dough to a mixing bowl and allow it to cool slightly.
Add eggs one at a time, beating well after each addition, until the dough is smooth and glossy.
Pipe the dough onto the prepared baking sheet in a large ring (about 8 inches in diameter). Brush with beaten egg, then sprinkle with sliced almonds.
Bake for 30-35 minutes, or until the choux pastry is puffed and golden brown.
Allow to cool completely.
While the pastry cools, prepare the vanilla filling.
In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla seeds (or extract) until stiff peaks form.
Slice the cooled choux ring horizontally and pipe or spoon the vanilla cream filling into the bottom half.
Place the top half back on and dust with powdered sugar.
Serve immediately or refrigerate until ready to serve.
