Decadent and Moist Chocolate Cake with a Simple Ganache
Ingredients:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1/2 cup heavy cream
1 cup semisweet chocolate chips
Directions:
Preheat oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients.
Beat on medium speed until smooth.
Stir in the boiling water until the batter is well combined.
The batter will be thin.
Pour the batter evenly into the prepared cake pans.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
For the ganache, heat heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and add chocolate chips, stirring until smooth.
Once the cakes are completely cool, spread the ganache evenly over the top and sides of the cake.
