Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar, plus extra for coating
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 3/4 cups all-purpose flour
1/4 cup cornstarch
1/4 teaspoon salt
Directions:
In a large mixing bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
Mix in the lemon zest and fresh lemon juice until well combined.
In a separate bowl, whisk together the flour, cornstarch, and salt.
Gradually add this to the butter mixture, mixing until a soft dough forms.
Divide the dough in half and shape each half into a log about 1.5 inches in diameter.
Wrap the logs in plastic wrap and refrigerate for at least 1 hour, or until firm.
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Unwrap the dough logs and slice them into 1/4-inch thick rounds.
Place the rounds on the prepared baking sheet.
Bake for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, roll each cookie in powdered sugar to coat them generously.
