Southern Butter-Soaked Pound Cake
Ingredients:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
Butter Glaze:
1/3 cup unsalted butter
3/4 cup granulated sugar
2 tablespoons water
2 teaspoons vanilla extract
Directions:
Preheat the oven to 325°F (163°C). Grease and flour a Bundt pan.
In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the flour mixture.
Pour the batter into the prepared Bundt pan and smooth the top. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the butter glaze by combining the butter, sugar, and water in a saucepan over medium heat. Cook, stirring constantly, until the butter is melted and the sugar is dissolved. Remove from heat and stir in the vanilla extract.
When the cake is done, remove it from the oven and immediately poke holes all over the surface using a skewer or fork. Slowly pour the glaze over the hot cake, allowing it to soak in.
Let the cake cool in the pan for 30 minutes before inverting onto a serving plate. Allow it to cool completely before slicing.
