Creamy Tomato-Based Indian Butter Chicken
Ingredients:
1.5 lbs boneless chicken thighs, cut into bite-sized pieces
1 cup plain yogurt
1 tablespoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon chili powder
1 teaspoon garam masala
1 tablespoon lemon juice
Salt to taste
2 tablespoons butter
1 large onion, finely chopped
2 cloves garlic, minced
1 tablespoon ginger, minced
1 cup tomato puree
1/2 cup heavy cream
1 teaspoon sugar
1 teaspoon fenugreek leaves (kasuri methi)
Fresh cilantro for garnish
Directions:
In a large bowl, mix yogurt, ginger-garlic paste, turmeric powder, chili powder, garam masala, lemon juice, and salt.
Add chicken pieces and marinate for at least 1 hour, preferably overnight in the refrigerator.
Heat 1 tablespoon of butter in a large skillet over medium heat. Add the marinated chicken pieces and cook until they are browned on all sides.
Remove and set aside.
In the same skillet, add the remaining butter.
Sauté onions until golden brown, then add minced garlic and ginger. Cook for 2-3 minutes.
Pour in the tomato puree, sugar, and cook for 10 minutes until the sauce thickens and the oil begins to separate from the mixture.
Reduce the heat and slowly stir in the heavy cream.
Add the cooked chicken back into the skillet and let it simmer for 10-15 minutes until the chicken is fully cooked and tender.
Stir in the fenugreek leaves and cook for another 2 minutes.
Garnish with fresh cilantro and serve hot with naan or basmati rice.
