Ingredients:
1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, chilled and cubed
3 large eggs
1 cup granulated sugar
1/2 cup fresh lemon juice
1 tablespoon lemon zest
1/4 teaspoon salt
2 tablespoons cornstarch
1/2 teaspoon vanilla extract
Powdered sugar for dusting
Directions:
Preheat oven to 350°F (175°C).
Line an 8×8 inch baking dish with parchment paper.
In a food processor, combine flour, powdered sugar, and butter.
Pulse until the mixture resembles coarse crumbs.
Press the mixture evenly into the bottom of the prepared baking dish. Bake for 15-20 minutes, or until the crust is golden brown. Remove from the oven and let it cool slightly.
In a large bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, salt, cornstarch, and vanilla extract until smooth and well combined.
Pour the custard mixture over the baked crust.
Return to the oven and bake for an additional 20-25 minutes, or until the custard is set and lightly golden on top.
Allow the custard squares to cool completely in the baking dish before lifting them out using the parchment paper.
Dust with powdered sugar before serving.
