Ingredients:
1 pound sea scallops, cleaned
3 tablespoons unsalted butter
3 cloves garlic, minced
Zest and juice of 1 lemon
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped
Lemon wedges, for garnish
Directions:
Pat the scallops dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the scallops in a single layer, being careful not to overcrowd the pan.
Sear the scallops for 2-3 minutes on each side, until a golden crust forms.
Remove scallops from the skillet and set aside.
In the same skillet, reduce the heat to medium, and add the butter.
Once melted, add the minced garlic and sauté until fragrant, about 1 minute.
Stir in the lemon zest and juice, and let the sauce simmer for another minute.
Return the scallops to the skillet, spooning the sauce over them.
Cook for an additional 1-2 minutes, just until the scallops are heated through.
Remove from heat, sprinkle with fresh parsley, and serve with lemon wedges.
