Juicy Garlic Butter Steak with Crispy Potatoes
Ingredients:
2 ribeye steaks (about 1 inch thick)
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon smoked paprika
Salt and pepper to taste
1 pound baby potatoes, halved
2 tablespoons olive oil
Directions:
Preheat oven to 400°F (200°C).
In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet and roast for 20 minutes.
While the potatoes are roasting, heat a large skillet over medium-high heat.
Season the steaks generously with salt, pepper, and smoked paprika.
Add 2 tablespoons of butter to the skillet. Once melted, add the steaks and sear for 3-4 minutes per side, or until a desired level of doneness is achieved.
Remove the steaks from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme. Cook for 1-2 minutes, or until fragrant.
Return the steaks to the skillet and spoon the garlic butter over them. Cook for an additional 1-2 minutes, then remove from heat.
Serve the steaks with the roasted potatoes on the side, drizzled with the garlic butter from the skillet.
