Ingredients:
2 cups fresh peaches, peeled and diced
1/4 cup sugar
1/2 teaspoon cinnamon
1 tablespoon lemon juice
1 tablespoon cornstarch
1 tablespoon water
1 package of refrigerated pie crusts
Vegetable oil for frying
Powdered sugar for dusting
Directions:
In a medium saucepan, combine peaches, sugar, cinnamon, and lemon juice.
Cook over medium heat until peaches soften, about 5 minutes.
In a small bowl, mix cornstarch and water, then add to the peach mixture. Cook until thickened, about 2-3 minutes.
Remove from heat and let cool.
Roll out the pie crusts on a lightly floured surface and cut into circles (about 4 inches in diameter).

Fold the dough over the filling to form a half-moon shape.
Press the edges with a fork to seal.
Heat vegetable oil in a large skillet over medium-high heat.
Fry the pies until golden brown, about 2-3 minutes per side.
Remove and drain on paper towels. Dust with powdered sugar before serving.
