Tender Braised Beef Short Ribs in a Rich Red Wine Reduction
Ingredients:
4 lbs beef short ribs
Salt and pepper to taste
2 tablespoons olive oil
1 large onion, chopped
3 carrots, peeled and chopped
2 celery stalks, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1 bottle red wine (750ml)
4 cups beef broth
3 sprigs fresh thyme
2 bay leaves
2 tablespoons all-purpose flour (optional, for thickening)
Fresh parsley for garnish
Directions:
Preheat oven to 325°F (163°C).
Season the short ribs generously with salt and pepper.
Heat olive oil in a large Dutch oven over medium-high heat.
Sear the short ribs on all sides until browned, about 3-4 minutes per side.
Remove and set aside.
In the same pot, add the chopped onion, carrots, and celery.
Sauté for about 5-7 minutes, until softened.
Add the minced garlic and tomato paste, cooking for another 2 minutes until fragrant.
Pour in the red wine, scraping up any browned bits from the bottom of the pot.
Bring to a boil and let the wine reduce by half, about 10 minutes.
Add the beef broth, thyme, and bay leaves. Return the short ribs to the pot, ensuring they are submerged in the liquid.
Cover the pot and transfer to the preheated oven. Braise for 2.5 to 3 hours, or until the short ribs are tender and falling off the bone.
(Optional) To thicken the sauce, remove the short ribs and set them aside.
Whisk in the flour into the remaining sauce and simmer on the stovetop until thickened. Return the short ribs to the sauce.
Garnish with fresh parsley before serving.
