Classic Italian Focaccia with Rosemary and Sea Salt

Ingredients:

2 1/4 teaspoons active dry yeast (1 packet)
1 1/2 cups warm water (110°F/45°C)
3 1/2 cups all-purpose flour
1/4 cup extra-virgin olive oil, plus more for drizzling
1 tablespoon sugar
1 1/2 teaspoons salt
2 tablespoons fresh rosemary, chopped
Coarse sea salt for sprinkling

Directions:

In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.

In a large bowl, combine the flour, sugar, and salt.

Make a well in the center and pour in the yeast mixture and 1/4 cup olive oil.

Mix until a dough forms. Turn the dough onto a floured surface and knead for about 5-7 minutes, or until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

Preheat oven to 450°F (230°C). Punch down the dough and transfer it to a greased baking sheet. Stretch the dough to fit the sheet.

Use your fingers to make dimples all over the surface of the dough.

Drizzle with olive oil and sprinkle with rosemary and coarse sea salt.

Bake for 20-25 minutes, or until golden brown and crispy on the edges.

Let cool slightly before slicing and serving.
