Classic Italian Eggplant Parmesan
Ingredients:
2 large eggplants, sliced into 1/4-inch rounds
1 cup all-purpose flour
2 large eggs, beaten
2 cups breadcrumbs
2 cups marinara sauce
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
1/4 cup olive oil
Salt and pepper to taste
Directions:
Preheat your oven to 375ยฐF (190ยฐC).
Arrange the eggplant slices on a paper towel-lined baking sheet and sprinkle with salt.
Let sit for 30 minutes to draw out excess moisture.
Pat the eggplant slices dry with a paper towel. Dredge each slice in flour, dip in beaten eggs, and coat with breadcrumbs.
Heat olive oil in a large skillet over medium heat. Fry the eggplant slices in batches until golden brown, about 2-3 minutes per side.
Transfer to a paper towel-lined plate to drain.
Spread a thin layer of marinara sauce in the bottom of a 9×13-inch baking dish.
Arrange a layer of eggplant slices over the sauce.
Spoon more marinara sauce over the eggplant, and sprinkle with mozzarella and Parmesan cheeses.
Repeat layers until all ingredients are used, finishing with a layer of cheese on top.
Bake for 25-30 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil before serving.
