1 lb (450g) chicken breast, cut into bite-sized pieces
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
1/2 cup chicken broth
1 tablespoon Dijon mustard
1 cup sour cream
1 tablespoon all-purpose flour
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium heat.
Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion and cook until translucent, about 3 minutes.
Add the garlic and cook for an additional 1 minute.
Add the sliced mushrooms and cook until they are softened, about 5 minutes.
Stir in the flour and cook for 1 minute to eliminate the raw flour taste.
Gradually add the chicken broth, stirring constantly to prevent lumps.
Add the Dijon mustard, paprika, and dried thyme. Bring to a simmer.
Return the chicken to the skillet and simmer for 10 minutes, or until the chicken is cooked through and the sauce has thickened.
Reduce heat to low and stir in the sour cream.
Cook for another 2-3 minutes until the sauce is creamy and well combined.
Season with salt and pepper to taste, and garnish with fresh parsley before serving.
