Ingredients:
1 sheet puff pastry, thawed
1/2 cup basil pesto
1 cup fresh mozzarella, sliced
1 cup cherry tomatoes, halved
Fresh basil leaves for garnish
Salt and pepper to taste
1 egg, beaten (for egg wash)
Directions:
Preheat your oven to 400°F (200°C).
Roll out the puff pastry on a lightly floured surface to a 12×12 inch square.
Cut the puff pastry into 9 equal squares.
Spread a teaspoon of basil pesto in the center of each square.
Place a slice of fresh mozzarella and a few halved cherry tomatoes on top of the pesto.
