200ml heavy cream
2 tbsp gelatin powder
100ml water
50g dark chocolate, grated (optional)
Directions:
Start by crushing the digestive biscuits into fine crumbs.
Combine the crumbs with melted butter until the mixture resembles wet sand.
Press the biscuit mixture into the base of a lined square baking dish, ensuring it’s evenly spread.
Refrigerate for 30 minutes.
In a large bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
In a separate bowl, dissolve the gelatin powder in warm water and let it sit for a few minutes.
Whip the heavy cream until it forms soft peaks, then fold it into the cream cheese mixture.
Add the dissolved gelatin to the cream cheese mixture and mix until fully incorporated.
