Ingredients:
2 cups fresh raspberries
1 cup sugar
1 tablespoon lemon juice
2 cups heavy cream
1 cup whole milk
1 teaspoon vanilla extract
Directions:
In a medium saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens, about 10 minutes. Remove from heat and let cool.
In a large bowl, whisk together heavy cream, milk, and vanilla extract until well combined.
Once the raspberry mixture has cooled, strain it through a fine mesh sieve to remove the seeds.
Discard the seeds and mix the raspberry puree into the cream mixture.
