Fluffy Donuts with Velvety Vanilla Cream
Ingredients:
2 ½ cups all-purpose flour
2 tablespoons sugar
1 package active dry yeast (2 ¼ teaspoons)
½ teaspoon salt
1 egg, beaten
¾ cup warm milk (110°F/45°C)
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Oil for frying
For the Vanilla Cream Filling:1 cup heavy cream
2 tablespoons sugar
1 teaspoon vanilla extract
Directions:
In a large mixing bowl, combine 1 cup of flour, sugar, yeast, and salt. Stir in the warm milk, beaten egg, melted butter, and vanilla extract until well combined.
Gradually add the remaining flour, a little at a time, until the dough begins to pull away from the sides of the bowl.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Once the dough has risen, punch it down and roll it out to about ½ inch thickness.
Use a round cutter to cut out donut shapes.
Heat oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C).
Fry the donuts in batches for 1-2 minutes on each side, or until golden brown.
Remove with a slotted spoon and drain on paper towels.
For the cream filling, beat the heavy cream, sugar, and vanilla extract together until stiff peaks form.
Once the donuts have cooled, use a pastry bag fitted with a small round tip to fill each donut with the vanilla cream.
