Creamy Coffee Dream
Ingredients:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 tablespoon instant coffee granules
1/2 cup brewed strong coffee, cooled
5 large egg yolks
1 teaspoon vanilla extract
Pinch of salt
Directions:
In a medium saucepan, combine the heavy cream, milk, and sugar.
Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling.
In a separate bowl, whisk the egg yolks until smooth.
Gradually pour about 1/2 cup of the hot cream mixture into the egg yolks while whisking continuously to temper the eggs.
Pour the egg mixture back into the saucepan with the remaining cream mixture.
Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 170°F/77°C).
Remove from heat and stir in the instant coffee granules, brewed coffee, vanilla extract, and a pinch of salt. Mix until fully combined.
Strain the mixture through a fine-mesh sieve into a clean bowl to remove any curdled bits. Allow the mixture to cool to room temperature.
Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight until thoroughly chilled.
Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
Transfer the ice cream to an airtight container and freeze for at least 2 hours or until firm before serving.
