Tender Beef Stew with Rich Gravy

Ingredients:

2 lbs beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large onion, chopped
4 cloves garlic, minced
1 bell pepper, chopped
2 tomatoes, chopped
2 cups beef broth
1 tablespoon tomato paste
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon ground black pepper
Salt to taste
1/4 cup chopped cilantro for garnish

Directions:

Heat the vegetable oil in a large pot over medium heat.

Add the beef cubes and brown them on all sides.

Remove the beef and set it aside.

In the same pot, add the chopped onion, garlic, and bell pepper.

Sauté until the onion is translucent and the bell pepper is softened, about 5 minutes.

Stir in the chopped tomatoes, tomato paste, cumin, paprika, chili powder, and black pepper.

Cook for an additional 2 minutes until fragrant.

Return the browned beef to the pot, pour in the beef broth, and bring to a boil.

Reduce the heat to low, cover, and let simmer for 1.5 to 2 hours, or until the beef is tender and the sauce has thickened.

Taste and adjust seasoning with salt as needed.

Garnish with chopped cilantro before serving.
