Classic French Beef Stew in Red Wine

Ingredients:

2 lbs (900g) beef chuck, cut into 1.5-inch cubes
Salt and freshly ground black pepper, to taste
3 tablespoons olive oil
1 large onion, chopped
2 carrots, sliced
3 cloves garlic, minced
2 tablespoons tomato paste
2 tablespoons flour
3 cups red wine (preferably Burgundy)
2 cups beef broth
1 bay leaf
1 teaspoon fresh thyme, chopped
8 oz (225g) mushrooms, quartered
12 small pearl onions, peeled
4 slices bacon, chopped
Fresh parsley, for garnish

Directions:

Preheat oven to 325°F (160°C).
Season beef with salt and pepper.
In a large Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef in batches, searing on all sides until browned.
Remove the beef and set aside.
In the same pot, add the remaining olive oil and sauté the chopped onion and carrots until softened, about 5 minutes.
Add garlic and cook for 1 minute, then stir in tomato paste and flour.
Cook for another 2 minutes.
Pour in the red wine, scraping up any browned bits from the bottom of the pot.
Add beef broth, bay leaf, and thyme, and bring to a simmer.
Return the beef to the pot, cover, and place in the preheated oven.
Cook for 2.5 to 3 hours, or until the beef is tender.
While the stew is cooking, sauté the mushrooms, pearl onions, and bacon in a skillet until the bacon is crisp and the vegetables are browned.
Stir the mushrooms, onions, and bacon into the stew.
Cook for an additional 30 minutes.
Remove from oven, discard bay leaf, and garnish with fresh parsley before serving.
