6 medium russet potatoes, peeled and thinly sliced
2 cups shredded cheddar cheese
1 small onion, finely chopped
1 cup sour cream
1 can cream of mushroom soup (10.5 oz)
1/4 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
2 tablespoons butter, melted
1/4 cup chopped fresh parsley (optional for garnish)

Directions:

Preheat oven to 375°F (190°C).
In a large mixing bowl, combine the sour cream, cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper.
Add the sliced potatoes and chopped onion to the bowl, stirring until they are evenly coated with the mixture.
