Ingredients:
2 cups elbow macaroni
1 lb cooked shrimp, peeled and deveined
1 cup celery, chopped
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon Old Bay seasoning
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Directions:
Cook the elbow macaroni according to the package instructions.
Drain and rinse under cold water to stop the cooking process. Set aside.
In a large bowl, combine the cooked shrimp, celery, red bell pepper, and red onion.
In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, Old Bay seasoning, salt, and pepper.
Pour the dressing over the shrimp and vegetables, and stir to coat evenly.
Add the cooled macaroni to the mixture and gently fold until well combined.
