Classic Canadian Flapper Pie with Creamy Custard and Meringue
Ingredients:
1 pie crust (store-bought or homemade)
1 cup graham cracker crumbs
1/4 cup sugar
1/2 cup butter, melted
2 cups milk
1 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 large egg yolks
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 large egg whites
1/4 teaspoon cream of tartar
1/2 cup sugar
Directions:
Preheat oven to 350°F (175°C).
For the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl.
Press mixture into the bottom and up the sides of a 9-inch pie dish.
Bake crust for 10 minutes, then set aside to cool.
In a medium saucepan, whisk together milk, granulated sugar, cornstarch, and salt.
Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble.
Whisk a small amount of the hot mixture into the egg yolks to temper them. Gradually whisk the egg yolks back into the saucepan, and continue to cook for an additional 2 minutes.
Remove from heat and stir in vanilla and almond extracts.
Pour the custard into the prepared crust.
For the meringue, beat egg whites and cream of tartar with an electric mixer until soft peaks form.
Gradually add sugar, beating until stiff, glossy peaks form.
Spread the meringue over the custard, making sure to seal the edges to the crust.
Bake for 10-15 minutes, or until the meringue is golden brown.
Allow the pie to cool completely before serving.
