Ingredients:
2 cans (21 oz each) apple pie filling
8 large flour tortillas
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup water
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
Directions:
Preheat oven to 350°F (175°C).
In each tortilla, place about 1/2 cup of apple pie filling in the center, then roll up tightly like a burrito, tucking in the sides.
Place the rolled tortillas seam-side down in a greased 9×13-inch baking dish.
In a medium saucepan, melt butter over medium heat.
Stir in granulated sugar, brown sugar, water, cinnamon, and nutmeg.
Bring the mixture to a boil, then reduce heat and simmer for 3 minutes, stirring constantly. Remove from heat and stir in the vanilla extract.
Pour the sugar mixture evenly over the enchiladas in the baking dish.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden and the sauce is bubbly.
Let the enchiladas cool slightly before serving.
They are delicious on their own, or you can serve them with a scoop of vanilla ice cream or a dollop of whipped cream.
