Chocolate Earthquake Cake with Cream Cheese and Pecans
Ingredients:
1 box chocolate cake mix
1 1/3 cups water
1/2 cup vegetable oil
3 large eggs
8 oz cream cheese, softened
1/2 cup unsalted butter, melted
2 cups powdered sugar
1 tsp vanilla extract
1 cup sweetened shredded coconut
1 cup chopped pecans
1 cup semisweet chocolate chips
Directions:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large bowl, prepare the chocolate cake mix according to package instructions, using the water, oil, and eggs. Set aside.
In another bowl, beat the softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth and creamy.
Sprinkle the shredded coconut and chopped pecans evenly over the bottom of the greased baking dish.
Pour the prepared chocolate cake batter over the coconut and pecans.
Spoon the cream cheese mixture over the cake batter in large dollops.
Use a knife to swirl it into the batter, creating a marbled effect.
Sprinkle the chocolate chips on top.
Bake for 40-45 minutes, or until the edges are set but the center is slightly gooey. Let cool slightly before serving.
