Ingredients:
1 lb ground beef
1 lb ground pork
1 large onion, finely chopped
2 cloves garlic, minced
1 cup French onion soup
1/2 cup bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
1/2 cup shredded mozzarella cheese (for topping)
2 tablespoons ketchup (for topping)
Directions:
Preheat oven to 375°F (190°C).
Grease a loaf pan or line with parchment paper.
In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, French onion soup, bread crumbs, Parmesan cheese, parsley, egg, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined.
Transfer the meat mixture to the prepared loaf pan, pressing it into an even shape.
Spread ketchup evenly over the top of the meatloaf.
Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Remove from the oven, sprinkle shredded mozzarella cheese over the top, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Let the meatloaf rest for 10 minutes before slicing. Serve warm.
