Ingredients:

1 lb dried navy beans
1/2 lb ham hocks or diced ham
1 large onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 bay leaf
1 teaspoon dried thyme
1 teaspoon smoked paprika
6 cups chicken broth
1 cup diced tomatoes (canned or fresh)
Salt and pepper to taste
2 tablespoons olive oil

Directions:

Rinse and soak the navy beans in a large bowl of water overnight, or for at least 8 hours. Drain and rinse the beans before cooking.

In a large pot or Dutch oven, heat olive oil over medium heat.

Add the onion, garlic, carrots, and celery, and sauté until the vegetables are tender, about 5-7 minutes.

Add the ham hocks or diced ham to the pot and cook for another 2 minutes.

Stir in the soaked beans, bay leaf, thyme, smoked paprika, chicken broth, and diced tomatoes. Bring the mixture to a boil.

Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beans are tender and the ham is cooked through. Stir occasionally and add more broth or water if necessary.

Remove the bay leaf and season with salt and pepper to taste before serving.
