Ingredients:
1 lb (450g) chicken breast, thinly sliced
2 tablespoons vegetable oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup snap peas
1 tablespoon fresh ginger, minced
3 cloves garlic, minced
1/4 cup soy sauce
2 tablespoons lemon juice
1 tablespoon honey
1 teaspoon cornstarch
2 tablespoons water
Salt and pepper to taste
Lemon zest (for garnish)
Fresh cilantro, chopped (for garnish)
Directions:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
Remove the chicken from the skillet and set aside.
In the same skillet, add the bell peppers and snap peas. Stir-fry for 3-4 minutes, or until vegetables are tender-crisp.
Add the minced ginger and garlic to the skillet and cook for 1 minute, or until fragrant.
In a small bowl, whisk together the soy sauce, lemon juice, honey, cornstarch, and water.
Pour the mixture into the skillet and bring to a simmer.
Return the chicken to the skillet and toss to coat with the sauce.
Cook for an additional 2-3 minutes, or until the sauce has thickened and everything is heated through.
Season with salt and pepper to taste, and garnish with lemon zest and fresh cilantro before serving.
