Marry Me White Beans
Creamy Tuscan White Beans with Sun-Dried Tomatoes
Ingredients:
2 tablespoons olive oil
1 small onion, finely chopped
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 teaspoon dried oregano
1 can (15 oz) white beans, drained and rinsed
1/2 cup sun-dried tomatoes, chopped
1/2 cup heavy cream
1/2 cup chicken broth (or vegetable broth)
1/4 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt and pepper to taste
Directions:
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and cook until softened, about 3-4 minutes.
Stir in the minced garlic, red pepper flakes, and dried oregano.
Cook for 1-2 minutes until fragrant.
Add the white beans and sun-dried tomatoes to the skillet, stirring to combine with the onion mixture.
Pour in the heavy cream and chicken broth, stirring to create a creamy sauce.
Let the mixture simmer for 5-7 minutes, until it thickens slightly.
Stir in the grated Parmesan cheese and fresh basil. Season with salt and pepper to taste.
Serve the creamy white beans warm, garnished with additional fresh basil and Parmesan if desired.
