Smothered Pork Chops
Creamy Onion and Mushroom Smothered Pork Chops
Ingredients:
4 bone-in pork chops
1 large onion, sliced
2 cloves garlic, minced
1 cup mushrooms, sliced
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons olive oil
1 tablespoon butter
1 tablespoon flour
1 teaspoon fresh thyme, chopped
Salt and pepper to taste
Directions:
Season the pork chops with salt and pepper on both sides.
Heat olive oil in a large skillet over medium heat.
Add pork chops and sear for 4-5 minutes on each side until golden brown. Remove and set aside.
In the same skillet, add butter and sliced onions.
Sauté until onions are soft and caramelized, about 5-7 minutes.
Add the minced garlic and mushrooms, and cook for another 2-3 minutes until mushrooms are tender.
Sprinkle flour over the onion and mushroom mixture, stirring well to combine.
Gradually pour in chicken broth, stirring continuously to prevent lumps.
Allow the mixture to simmer until it thickens slightly.
Stir in the heavy cream and fresh thyme, and let the sauce simmer for 2-3 minutes until creamy.
Return the pork chops to the skillet, spooning the sauce over them. Cover and cook on low heat for 15-20 minutes, or until the pork chops are fully cooked and tender.
