Rich and Comforting Fire Roasted Tomato Soup

Ingredients:

2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 cans (14.5 ounces each) fire-roasted diced tomatoes
4 cups vegetable broth
1 tablespoon tomato paste
1 teaspoon sugar
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt and pepper to taste
1/4 cup heavy cream or coconut milk (optional)
Fresh basil or parsley for garnish

Directions:

Heat olive oil in a large pot over medium heat.

Add the chopped onion and sauté until softened, about 5-7 minutes.

Add the minced garlic and cook for another 1-2 minutes, until fragrant.

Stir in the fire-roasted tomatoes (with their juice), vegetable broth, tomato paste, sugar, smoked paprika, thyme, salt, and pepper.

Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to allow the flavors to meld.

If desired, use an immersion blender to blend the soup until smooth. Alternatively, you can leave it chunky for a more rustic texture.

Stir in the heavy cream or coconut milk, if using, for a creamier soup.

Adjust seasoning to taste.

Ladle the soup into bowls and garnish with fresh basil or parsley before serving.
