Heavenly Vanilla Cream-Filled Donuts
Ingredients:
2 cups all-purpose flour
1/4 cup granulated sugar
2 1/4 tsp active dry yeast
1/2 tsp salt
3/4 cup warm milk
2 tbsp unsalted butter, softened
2 large egg yolks
1 tsp vanilla extract
Oil for frying
For the Cream Filling:1 cup whole milk
1/2 cup granulated sugar
2 tbsp cornstarch
3 large egg yolks
2 tbsp unsalted butter
1 tsp vanilla extract
Directions:
In a large bowl, combine flour, sugar, yeast, and salt. Gradually add warm milk, butter, egg yolks, and vanilla extract.
Knead the dough until smooth and elastic.
Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
Roll out the dough on a floured surface to about 1/2 inch thick.
Cut into donut shapes using a donut cutter or a round cutter.
Cover and let the donuts rise for another 30 minutes.
Heat oil in a deep fryer or large pot to 350°F (175°C).
Fry the donuts until golden brown, about 2 minutes per side.
Drain on paper towels.
To prepare the cream filling, heat milk in a saucepan until simmering. In a separate bowl, whisk together sugar, cornstarch, and egg yolks.
Slowly whisk in the hot milk.
Return the mixture to the saucepan and cook over medium heat until thickened.
Remove from heat and stir in butter and vanilla extract. Let the cream cool completely.
Once the donuts and cream are cooled, fill a piping bag with the cream filling. Insert the tip into the side of each donut and fill with cream.
