Loaded Cheesy Burritos with Beef and Veggies
Ingredients:
1 lb ground beef
1 cup cooked rice
1 cup shredded cheddar cheese
1 bell pepper, diced
1 onion, diced
1 zucchini, diced
1 cup corn kernels (fresh or frozen)
1 can black beans, drained and rinsed
1 packet taco seasoning
1/2 cup salsa
8 large flour tortillas
1/4 cup chopped cilantro
Salt and pepper to taste
Sour cream and guacamole for serving
Directions:
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the diced onion and bell pepper to the skillet, cooking until softened, about 5 minutes.
Stir in the zucchini, corn, and black beans.
Cook for another 3-4 minutes until the veggies are tender.
Add the taco seasoning and salsa to the mixture.
Stir well to combine and let it simmer for 5 minutes.
Remove the skillet from the heat and stir in the cooked rice, shredded cheddar cheese, and chopped cilantro.
Season with salt and pepper to taste.
Warm the flour tortillas in a dry skillet or microwave.
Place a generous amount of the beef and veggie mixture in the center of each tortilla.
Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.
Serve the burritos with sour cream and guacamole on the side, if desired.
